Jambalaya Casserole

This was a new recipe last night! Everyone liked it. Even the kids!

1 large onion, chopped
1 large green pepper, chopped
2 celery ribs, chopped
4 garlic cloves, minced or 1.5 Tbsp Garlic Powder
1 pound ground chicken
3 cups chicken or turkey broth
2 cups uncooked brown rice
1 cup chopped fresh tomatoes or 1 can diced with juice
1/2 cup chopped green onions

2 tablespoons and 2 teaspoons minced fresh parsley
1 tablespoon Worcestershire sauce
1 tablespoon hot pepper sauce
3/4 teaspoon salt
1 teaspoon pepper

In a large skillet, spray with cooking spray and saute the onion, green pepper, celery and garlic until tender. Place in a very large bowl;
Next brown the ground chicken in the same pan. After brown drain and add to bowl then stir in the remaining ingredients.
Transfer to a shallow 3-qt. baking dishe. Cover and bake at 450 degrees F for 45-50 minutes or until rice is tender, stirring twice.
