Veggie StirFry

For a healthy side dish or add some meat or tofu for a main dish, give this stir fry a chance!

1/2 bag coleslaw mix
4 large mushrooms sliced
2 thick slices of sweet onion
4 stalks of celery
2 slices of tomato
1/3 Zucchini cut in slices
Any other veggies you like!

Seasonings - I add cumin, chili powder and garlic powder.

Spray the bottom of a large non stick skillet with cooking spray. Add cumin, chili powder and garlic power. Add veggies add more seasonings to taste. Cover with lid, stirring often over medium low heat. Cook to desired tenderness. Enjoy!

It takes between 10 and 20 minutes depending on the heat of your burner!
